How to Prepare Moroccan Couscous 👌🏻❤️

Ingredients:

For the couscous:

  • 500g medium semolina couscous 🥣

  • 1 tbsp olive oil 🫒 or butter 🧈

  • A pinch of salt 🧂

  • Water 💧

For the broth:

  • 500g lamb, beef, or chicken 🐑🍗

  • 2 chopped onions 🧅

  • 2 carrots 🥕

  • 2 zucchinis (green squash) 🥒

  • 2 potatoes 🥔

  • 1 turnip

  • A piece of pumpkin 🎃 (optional)

  • 1 grated tomato 🍅

  • A handful of soaked chickpeas 🫘

  • nger, black pepper, turmeric, paprika, salt 🧂🌶️

  • Fresh coriander and parsley 🌿

  • Vegetable oil + olive oil 🛢

Preparation:

For the broth:

  1. In a pot, heat the oil and add the chopped onion and meat 🧅🍖.

  2. Add the spices and stir well 🧂.

  3. Add the grated tomato and chickpeas, then cover with water 💧.

  4. Let it cook for a while, then gradually add the vegetables 🥕🥔🥒.

  5. Let everything cook until all ingredients are tender.

For the couscous:

  1. Sprinkle water over the couscous, add a bit of oil, and mix it by hand ✋.

  2. Steam it in a couscoussier for 20 minutes ♨️.

  3. Return it to the bowl, sprinkle a bit of water, and steam it again once or twice.

  4. At the end, add butter or ghee 🧈 and mix well.

Serving:

  • In a serving dish, spread the couscous 🍽️.

  • Place the meat in the center and arrange the vegetables on top 🍖🥦.

  • Pour a little broth over it, and serve the rest in a separate bowl next to the dish 🍲.
